I've always been a big believer in New Year's resolutions. I love setting intentions and challenges for the year ahead - sometimes small things like doing more regular meditations (2020 goal) or big ones like cutting out soda from my diet (2016 goal). This year, I've challenged myself to curate a standard morning routine. Mornings and I never played well together - either sleeping in too late or waking up with too little time to trek to class - I never built a routine that worked for me. I've challenged myself to wake up by 7:00 every morning, come to life with a shower, journal, and enjoy an energizing breakfast before logging into work. So far, it's felt wonderful to reclaim my mornings and to just see more sunlight in my days! This banana nut oatmeal warms up my chilly mornings with just the right amount of sweetness, protein, and all of the energy from a generous serving of rolled oats! I often double up the portion so tomorrow me only needs to pop it in the microwave for 1 minute while I pour myself a cup of coffee. Don't forget to serve with a glass of water to jump start your day's hydration.
Ingredients:
1/2 cup of rolled oats
3/4 cup of oat milk (or your favorite milk)
1 very ripe banana, the riper the sweeter your oatmeal will be
1/2 tsp of cinnamon
1/2 - 1 tbsp of maple syrup
pinch of salt
chopped walnuts, almonds, or hazelnuts
optional: 1 tbsp of flax seeds
Method:
Mash banana in separate bowl
Add mashed banana, oats, plant milk, cinnamon, maple syrup, and salt in a small pot over medium heat. You may also add your flax seeds in at this point, as well as your nuts if you prefer them in the mix rather than nestled on top.
Stirring occasionally so the bottom doesn't catch, allow oats to bubble gently until desired consistency. If your oatmeal thickens up too much, add a splash of milk or water in to loosen it up - stir to combine then remove from heat. Plate up into your favorite bowl!
Now you can get as creative as you like! Top with chopped nuts, fruit, nut butter, hemp seeds, an additional drizzle of maple syrup, or whatever makes your morning a little bit sweeter!
