Growing up, bauernschmaus meant that nobody wanted to cook and that was a good thing! Though This deceivingly simple meal melds this world's greatest flavors (potatoes, onions, and smoked sausage) in one heart warming meal! Stripped down recipe, courtesy of my mom! Ingredients:
4 - 5 medium russet potatoes, peeled
1 onion, sliced into 1/4 inch
2 large eggs, beaten
1 tsp. paprika
3 tbsp. butter
1 lb. kielbasa, sliced
salt & pepper
Sour cream, chives or green onions for serving
Method:
Parboil whole, peeled potatoes. Place whole, peeled potatoes in a large pot of cool salted water, bring water to boil and then reduce to simmer. Par boil potatoes for 7-10 minutes - drain and allow to cool until able to handle.
Once cool to touch, slice potatoes into 1/4 inch to 1/2 inch slices. Doesn't need to be pretty, just try to make them as even as possible
In a large, cast iron skillet melt three tbsp butter over medium heat. Fry sliced onion in butter until beautifully golden - add paprika and salt/pepper to taste! Carefully add your sliced potatoes to brown off - 3 to 4 minutes.
Preheat oven to 325 degrees. Layer potatoes and sliced kielbasa in baking dish. Pour beaten eggs, seasoned to taste, over potatoes. Bake covered for 30 minutes.
Serve with sour cream, chives or green onions.
