This classic Hungarian dish is a true family favorite and perfect family warmer! This bare bones recipe bought courtesy of my mom. Ingredients:
1 whole chicken, broken down
2 large onions, sliced
2 tbsp sweet Hungarian paprika
2 diced potatoes
1 green pepper and 1 red pepper, cut into 1 inch chunks
1 tsp corn starch
Salt & pepper
Method:
Generously season chicken pieces with salt and freshly cracked pepper. Remove from pan once golden brown on all sides and let rest.
Melt one tablespoon of butter into the chicken drippings left in the pan. Add onions to the pan.
Once brown, add paprika to the onions, stirring frequently to prevent burning.
Return chicken to the pan with 1 cup of water. Bring to simmer and cook covered for 30 minutes.
Add bell pepper and potatoes and cook until tender, about 8-10 minutes. You'll know your potatoes are done when a knife is able pierce the potato and fall off with no resistance.
Thicken gravy with 1 tsp of cornstarch dissolved in a 1/4 cup of water.
Stir into your pan and allow to simmer for 5 minutes.
Serve over rice or egg noodles with sour cream.
