Huevos Rancheros Inspired Grits

I've never been a breakfast person, but something about COVID quarantine taught me that cheesy grits and a runny egg topped to high heavens can turn any end of the world blues around.

Ingredients

  • 1 cup grits

  • 4 cups water or stock

  • 1 cup milk

  • 1 cup cheddar cheese (I use vegan cheddar, but please for the love of God use real cheese if you eat it!)

  • sliced green onions

  • chopped cilantro

  • 1/3 cup black or pinto beans

  • 1 egg

  • Salsa of choice

Method:

  1. We are making grits to last y'all. In a medium stock pot, combine grits, water or stock, and a solid pinch of salt. Bring to a gentle simmer and stir until thickened. Remove from heat. Add milk, cheddar cheese, and a whole bunch fresh ground pepper.

  2. Warm black beans in a small saucepan (homemade is better, but if you're using the canned stuff try spicing it up!)

  3. Fry egg in butter until crisp on the edges and set in the middle.

  4. Spoon your grits into your favorite bowl, top with your egg and beautifully arrange your toppings! Take a picture to let your loved ones know that even during the end of the world... you made yourself a whole breakfast! Congratulations superstar!
