Spinach Quiche

No single other food has captured my heart quite like my mom's spinach quiche. While the ingredients lists raises questions, the end result is the perfect golden crust, creamy spinachy goodness in the middle, and delectable caramelized onions to top the whole thing off! Find out for yourself why this quiche takes the #1 spot in my comfort food driven heart. This recipe uses a pre-made pie shell for two reasons; firstly that's just how I grew up enjoying it and secondly (more importantly) my pie shells capabilities are not quite to the Mary Berry standard! Ingredients:

  • 9" pie shell (or omit for a crustless quiche moment)

  • 1/2 cup mozzarella

  • 1 1/2 cup cottage cheese, drained (only curds)

  • 1/3 cup milk

  • 4 eggs

  • 1/2 tsp. salt

  • freshly cracked pepper

  • dash o' nutmeg

  • 10-12 oz pack thawed chopped spinach, drained

  • 2 tbsp butter

  • 1 onion, thinly sliced

(optional substitution: 3/4 cup cottage cheese & 3/4 c. ricotta cheese for a slightly creamier center!)


Method:

  1. Bake shell at 475F for 3 minutes.

  2. Remove shell from oven and reduce temperature to 350.

  3. Drain thawed spinach in a colander, lightly pressing with the back of a spoon to release as much liquid as possible. (Alternatively, placed thawed spinach in a clean tea towel & wring out excess liquid). We want our spinach to be as dry as we can get it to avoid a soggy bottom (hello Mary!)

  4. In a small saucepan, melt 2 tbsp butter over medium heat. Let onions caramelize in the pan with a pinch of salt, stirring frequently. Don't remove from pan until the onions have achieved a golden color and jammy consistency.

  5. In a large bowl, whisk all 4 eggs and milk until homogenous. Add mozzarella, drained cottage cheese curds, salt, pepper, nutmeg & spinach. Stir to combine.

  6. Pour egg mixture into pie shell. Delicately spoon caramelized onions atop. Carefully place quiche into the oven and bake for 90 minutes. Remove from oven and let cool for at least 15 minutes before serving.

(Pro tip: a chilled slice of spinach quiche is the single most delicious midnight snack)
